DIY Indian dessert:Almond & Pista Kulfi Recipe




Kulfi is one of my all-time favorite dessert.The rich creamy goodness of a kulfi with some slurpy faluda and sweet rose syrup is the perfect indulgence on a hot day.Especially when it's home-made by your mom. Last weekend my mother made plenty for my family and friends, and they turned out to be as delicious as they always do!.I did help her 'a bit' :P and clicked some pics!So here's sharing my mother's recipe of Almond & Pista kulfi!






ALMOND PISTA KULFI:

Preparation time:35-40 minutes.

Serves:12-15


You'll need:

1.Mawa/khowa kheer- 300 gms
2.Sugar- 400 gms
3. Cardamon Powder- 1 teaspoon
4.Rose water- 2 tblspoon
5.Chopped Almond & Pista -150 gms
6.Custard Powder- 2 tblspoon
7.Milk Powder- 6 tblspoon
8.Milk- 1 litre reduced to 1/2 litre
9.Kulfi Moulds-as required
10.Rose Syrup-according to your taste
11.Faluda-as required







Preparation:

1.Let the reduced milk simmer on medium heat.

  First,add the sugar.Stir properly.The sugar will start dissolving soon.

2.Next add in the dried milk/mawa.Keep on stirring till it melts and the milk turns thicker.



3.Now,you add the milk powder.It's easier if you mix in some milk and then pour it into the milk.

4.Stir,then add the rose water.It gives a nice,rich rosy aroma to the mix.


5.Next add the custard powder.You need to mix it with 2 tablespoons of milk and when it dissolves completely then only you add it to your kulfi mix.

6.Keep stirring continuously when you are adding the custard powder .As you stir,you'll find the mixture instantly thickens.You need to let this cook for a few minutes on medium heat.


7.Now,add the cardamon powder.

8.Finally,mix in the nuts,the almonds and pistas.Give it a final stir,turn off the heat after a minute.



9.After the mixture has cooled down a bit pour spoonfuls of the kulfi mixture into your kulfi moulds and secure with the caps.

10.Refrigerate the moulds for 5-6 hours.


Service:

The kulfi will be set in few hours.When you want to serve one,you need to open the cap,and run a knife through the edges just like you would do with a cake,this way you can de-mold the kulfi.

It is served with faluda/rice noodles.You just need to boil the noodles,strain it,and them keep it in ice cold water. At last,do add a splash of rose syrup to the dish.Together they taste divine!
